Next time you’re enjoying peanut butter as part of a snack or meal, know that you’re not only getting a filling and nutritious spread, but you’re also benefiting from its brain boosting benefits. You can try this brain boosting breakfast as just one of the many ways to get the benefits of peanut butter in.
Combine the rolled oats, chia seeds, cacao powder, coconut milk and Greek yoghurt in a bowl. Leave to soak overnight, or for a minimum of an hour. If required, add a splash more coconut milk.
When ready to serve, stir through the peanut butter and top with the strawberries.
