Place frozen Birds Eye Cauliflower & Broccoli Rice in a microwave safe dish. Cook uncovered on HIGH for 5 minutes, stirring halfway. Set aside to cool.
Add the lentils, red onion, nuts, seeds and fresh herbs, fruit and lemon juice to a bowl. Season with salt and pepper. Stir through the rice once cooled.
Mix the yoghurt, honey and cumin together in a small bowl until smooth. Drizzle over the dressing and toss to combine.
