Nutty Lentil Salad
- 1 cup Birds Eye cauliflower & broccoli rice
- 3/4 cup lentils drained and rinsed
- 1/4 red onion diced
- 1 tablespoon pepitas roughly chopped
- 2 tablespoon slivered almonds
- 1/2 tablespoon pine nuts
- 1 tablespoon fresh coriander roughly chopped
- 1 tablespoon fresh parsley roughly chopped
- 1 tablespoon pomegranate seeds
- 1/2 lemon juiced
- 2 tablespoon Greek yoghurt
- 1 teaspoon raw honey
- 1/4 teaspoon ground cumin
- Place frozen Birds Eye Cauliflower & Broccoli Rice in a microwave safe dish. Cook uncovered on HIGH for 5 minutes, stirring halfway. Set aside to cool.
- Add the lentils, red onion, nuts, seeds and fresh herbs, fruit and lemon juice to a bowl. Season with salt and pepper. Stir through the rice once cooled.
- Mix the yoghurt, honey and cumin together in a small bowl until smooth. Drizzle over the dressing and toss to combine.
