Got a craving for chicken nuggets? This is a healthy homemade version of chicken nuggets & slaw, it's so tasty I guarantee the family will ask you to cook it again!
300gchicken thigh filletstrimmed and diced into 3cm pieces
1eggfree range, whisked
1/4cupextra-virgin coconut oilextra virgin
1/4cupalmond meal
1/2cupbrown rice flour
1/2tspsmoked paprika
For the corn side
1corn cob
1/2tspsmoked paprika
Ingredients for Healthy Slaw
1cupred cabbagefinely shredded
3tbspmayonnaise
Salt and pepperto taste
1carrotgrated
1/2lemonjuiced
Instructions
Prepare the nuggets
Place whisked egg in one bowl. Combine the salt, pepper, paprika, flour and almond meal in another.
Dredge the chicken pieces by first tossing through the flour mixture, then into the egg then again into the flour mixture. Shake off excess and place on a wire rack set over a sheet of baking paper. Continue with remaining chicken pieces.
Heat coconut oil in a heavy-based frying pan or skillet over medium heat. Once oil is hot, add in chicken pieces, fry until golden brown and crispy. Transfer back onto the wire rack, and set aside for when you're ready to serve. Drain out most of the coconut oil leaving a little so you can cook the corn.
Return the pan to a medium heat. Add corn to the frying pan, sprinkling over paprika. Cook for 5 minutes, turning regularly. Remove from the pan, allow to cool slightly, then slice the corn into a few rounds.
Prepare the slaw
Combine all ingredients together. Massage a little with your hands to mix everything together.
To serve it up
Simply divide the servings of Chicken Nuggets, Slaw, Corn Rounds and mayonnaise between your plates, and tuck in!
