Healthy Chicken Nuggets with Corn and Slaw

Ingredients
  

Ingredients for Nuggets

  • 300 g chicken thigh fillets trimmed and diced into 3cm pieces
  • 1 egg free range, whisked
  • 1/4 cup extra-virgin coconut oil extra virgin
  • 1/4 cup almond meal
  • 1/2 cup brown rice flour
  • 1/2 tsp smoked paprika

For the corn side

  • 1 corn cob
  • 1/2 tsp smoked paprika

Ingredients for Healthy Slaw

  • 1 cup red cabbage finely shredded
  • 3 tbsp mayonnaise
  • Salt and pepper to taste
  • 1 carrot grated
  • 1/2 lemon juiced

Instructions
 

Prepare the nuggets

  • Place whisked egg in one bowl. Combine the salt, pepper, paprika, flour and almond meal in another.
  • Dredge the chicken pieces by first tossing through the flour mixture, then into the egg then again into the flour mixture.
    Shake off excess and place on a wire rack set over a sheet of baking paper.
    Continue with remaining chicken pieces.
  • Heat coconut oil in a heavy-based frying pan or skillet over medium heat.
    Once oil is hot, add in chicken pieces, fry until golden brown and crispy.
    Transfer back onto the wire rack, and set aside for when you're ready to serve.
    Drain out most of the coconut oil leaving a little so you can cook the corn.
  • Return the pan to a medium heat.
    Add corn to the frying pan, sprinkling over paprika.
    Cook for 5 minutes, turning regularly.
    Remove from the pan, allow to cool slightly, then slice the corn into a few rounds.

Prepare the slaw

  • Combine all ingredients together. Massage a little with your hands to mix everything together.

To serve it up

  • Simply divide the servings of Chicken Nuggets, Slaw, Corn Rounds and mayonnaise between your plates, and tuck in!
