Ingredients
For the Cauliflower & Chickpeas:
2
cups
cauliflower
finely chopped
1
tablespoons
extra-virgin olive oil
1
teaspoons
ground cumin
salt and pepper
to taste
2
cups
tinned chickpeas
drained and rinsed
For the Salad:
2/3
green apple
thick slices
2/3
avocado
sliced
1/2
cup
fresh mint
roughly chopped
1/2
cup
fresh parsley
roughly chopped
For the Dressing:
2
teaspoons
wholegrain mustard
1/2
lemons
juiced
2
teaspoons
extra-virgin olive oil
salt and pepper
to taste
Instructions
For the Cauliflower & Chickpeas:
Preheat oven to 200ÂșC.
In a large bowl combine cauliflower, olive oil, cumin, salt and pepper.
Spread them out on an oven tray in an even layer.
Bake for 15 minutes,then add the chickpeas and cook for a further 10-15 minutes.
For the Salad:
Divide the apple, avocado and fresh herbs between two bowls.
When the cauliflower and chickpeas are cooked, add half to each salad bowl.
For the Dressing:
Combine all ingredients in a small bowl and set aside.
To Serve:
Pour half of the dressing over each bowl of cauliflower salad.
