Serves: 2

Ingredients

For the Cauliflower & Chickpeas:

  • 2 cups cauliflower finely chopped
  • 1 tablespoons extra-virgin olive oil
  • 1 teaspoons ground cumin
  • Salt to taste
  • Pepper to taste
  • 2 cups tinned chickpeas drained and rinsed

For the Salad:

  • 2/3 green apple thick slices
  • 2/3 avocado sliced
  • 1/2 cup fresh mint roughly chopped
  • 1/2 cup fresh parsley roughly chopped

For the Dressing:

  • 2 teaspoons mustard wholegrain
  • 1/2 lemons juiced
  • 2 teaspoons extra-virgin olive oil
  • Salt to taste
  • Pepper to taste

Instructions

For the Cauliflower & Chickpeas:

  • Preheat oven to 200ºC.
  • In a large bowl combine cauliflower, olive oil, cumin, salt and pepper.
  • Spread them out on an oven tray in an even layer.
  • Bake for 15 minutes,then add the chickpeas and cook for a further 10-15 minutes.

For the Salad:

  • Divide the apple, avocado and fresh herbs between two bowls.
  • When the cauliflower and chickpeas are cooked, add half to each salad bowl.

For the Dressing:

  • Combine all ingredients in a small bowl and set aside.

To Serve:

  • Pour half of the dressing over each bowl of cauliflower salad.
