Halloumi Burger

Ingredients
  

  • 60 g halloumi cut into thick slices
  • 2 slices sourdough bread
  • 1/3 avocado mashed
  • 1/2 cup rocket leaves
  • 1/2 cup red cabbage finely shredded
  • 1/4 carrot grated
  • 1/2 to mato sliced

Method
 

  1. Heat a frying pan over medium heat. Add the halloumi slices and fry on each side for 3 minutes, until golden.
  2. Spread the avocado on one slice of sourdough and top with rocket, cabbage, carrot, tomato and halloumi.
  3. Top with the remaining sourdough slice and cut in half to serve.
