One Pan Roast Veg & Chickpeas

Ingredients
  

  • 1 cup brussel sprouts halved
  • 1 cup potato thinly sliced
  • 1 carrot sliced
  • 1/4 red onion sliced
  • salt & pepper to taste
  • 1 tablespoon extra-virgin olive oil
  • 3/4 cup chickpeas drained & rinsed
  • 1/2 teaspoon ground cumin
  • 1 cup rocket leaves
  • 1/2 lemon juiced

Method
 

  1. Preheat your oven to 180°C on a fan forced setting.
  2. Assemble the brussel sprouts, potato, carrot and red onion on a baking tray. Season with salt and pepper.
  3. Drizzle over the olive oil and place in the oven for 10 minutes.
  4. Mix the cumin and the chickpeas in a bowl.
  5. After the 10 minutes, add the cumin chickpeas to the tray and return it to the oven to cook for 15 minutes.
  6. Transfer the chickpeas and roast veg to a plate and add the rocket.
  7. Drizzle over the lemon juice to serve.
