Greek Style Salad with Southern Blue Whiting
Ingredients
- 2 fillets frozen Birds Eye Southern Blue Whiting – Original crumb
- 1 cup lettuce shredded
- ½ Lebanese cucumber sliced
- ½ cup cherry tomatoes halved
- 5 kalamata olives pitted and halved
- 2 radish sliced
- 30 g goats cheese crumbled
- ¼ red onion sliced
Ingredients for Dressing:
- ½ lemon juiced
- 1 clove garlic minced
- 1 teaspoon extra-virgin olive oil
- ½ teaspoon dried oregano
Instructions
- Preheat the oven to 200°C, on a fan forced setting.
- Place the frozen Birds Eye Whiting on a paper lined baking tray and place it in the oven. Cook for 9 minutes before turning it over and cooking for a final 9 minutes.
- In the meantime, assemble the salad by placing the lettuce, cucumber, cherry tomatoes, kalamata olives, radish, goat’s cheese and red onion in a bowl. Stir to combine.
- Prepare the dressing by combining the lemon juice, garlic, extra-virgin olive oil and dried oregano.
- Drizzle the dressing over the salad.
- Once cooked, plate up the Birds Eye Whiting on top of the salad and serve.
