Chicken Nourish Bowl
Ingredients
- 1 cup sweet potato cut into cubes
- 1 cup broccoli cut into florets
- 1 teaspoon extra-virgin olive oil
- 150 g chicken breast sliced
- 1/2 cup red cabbage thinly sliced
- 1 cup baby spinach
Ingredients for Dressing
- 1/2 tablespoon apple cider vinegar
- 1/2 tablespoon extra-virgin olive oil
- 1/2 teaspoon dijon mustard
- salt & pepper to taste
Instructions
- Preheat the oven to 200°C, on a fan forced setting.
- Place the sweet potato and broccoli on a tray, season with salt and pepper and bake in the oven for 20 minutes.
- Meanwhile, heat the olive oil in a frying pan over a medium heat. Add in chicken slices and cook for 3 to 4 minutes on each side, until golden. Season with salt and pepper.
- In a small bowl or jar, combine the dressing ingredients.
- Arrange the red cabbage, baby spinach, sweet potato, broccoli and chicken in a bowl.
- Pour over the dressing to serve.
