Ingredients
  

  • 2 eggs free range
  • 1/4 teaspoon baking powder gluten free baking powder
  • 1/2 teaspoon cinnamon
  • 1 tablespoon coconut flour
  • 1/2 banana mashed
  • 1 tsp coconut oil extra virgin
  • 1/2 cup mixed berries fresh or frozen
  • 1/4 cup yoghurt greek
  • 1 tbsp pumpkin seeds
  • 1/2 lime zest

Instructions
 

  • Using a fork, mix eggs, baking powder, cinnamon and coconut flour until well combined.
  • Add mashed banana and mix again until just combined. If mixture is too thick, simply add a touch of water.
  • Heat oil in a small frying pan over medium heat.
  • Once melted, add 1/4 of the mixture to cover the base.
  • Cook until small bubbles appear and the bottom of the pancake is cooked, then gently flip over and cook the other side.
  • Repeat with the rest of the mixture.
  • Serve the pancakes with a dollop of natural yoghurt, berries, pepitas and lime zest.

Notes

Gluten-Free Option: To make this recipe gluten-free, replace the baking powder with gluten-free baking powder
