Ingredients

  • 2 free range egg(s)
  • 1/4 teaspoon(s) baking powder (or gluten free baking powder)
  • 1/2 teaspoon(s) cinnamon (ground)
  • 1 tablespoon(s) coconut flour
  • 1/2 banana(s) mashed
  • 1 teaspoon(s) coconut oil (extra virgin)
  • 1/2 cup(s) mixed berries (fresh or frozen) fresh or frozen
  • 1/4 cup(s) yoghurt (natural)
  • 1 tablespoon(s) pepitas (pumpkin seeds)
  • 1/2 lime(s) zest

Method

  1. Using a fork, mix eggs, baking powder, cinnamon and coconut flour until well combined.
  2. Add mashed banana and mix again until just combined. If mixture is too thick, simply add a touch of water.
  3. Heat oil in a small frying pan over medium heat. Once melted, add 1/4 of the mixture to cover the base. Cook until small bubbles appear and the bottom of the pancake is cooked, then gently flip over and cook the other side. Repeat with the rest of the mixture.
  4. Serve the pancakes with a dollop of natural yoghurt, berries, pepitas and lime zest.
