Ingredients

  • 2 wholegrain (or gluten free) bread toasted
  • 20 g goat's feta
  • 1/4 avocado
  • 1/4 cup peas frozen & defrosted, or fresh
  • 1/8 cup mint finely chopped
  • 1/2 lemon(s) squeezed

Method

  1. Roughly mash goat's cheese, avocado, peas and mint together. Season well.
  2. Toast bread and top with mash and a squeeze of lemon.
