Preheat the oven to 200°C, on a fan forced setting.
Place the frozen Birds Eye Whiting on a paper lined baking tray and place it in the oven. Cook for 9 minutes before turning it over and cooking for a final 9 minutes.
In the meantime, assemble the salad by placing the lettuce, cucumber, cherry tomatoes, kalamata olives, radish, goat’s cheese and red onion in a bowl. Stir to combine.
Prepare the dressing by combining the lemon juice, garlic, extra-virgin olive oil and dried oregano.
Drizzle the dressing over the salad.
Once cooked, plate up the Birds Eye Whiting on top of the salad and serve.
