​​Greek Style Salad with Southern Blue Whiting

  • 2 fillets frozen Birds Eye Southern Blue Whiting – Original crumb
  • 1 cup lettuce shredded
  • ½ Lebanese cucumber sliced
  • ½ cup cherry tomatoes halved
  • 5 kalamata olives pitted and halved
  • 2 radish sliced
  • 30 g goats cheese crumbled
  • ¼ red onion sliced

Ingredients for Dressing:

  • ½ lemon juiced
  • 1 clove garlic minced
  • 1 teaspoon extra-virgin olive oil
  • ½ teaspoon dried oregano


  • Preheat the oven to 200°C, on a fan forced setting.
  • Place the frozen Birds Eye Whiting on a paper lined baking tray and place it in the oven. Cook for 9 minutes before turning it over and cooking for a final 9 minutes.
  • In the meantime, assemble the salad by placing the lettuce, cucumber, cherry tomatoes, kalamata olives, radish, goat’s cheese and red onion in a bowl. Stir to combine.
  • Prepare the dressing by combining the lemon juice, garlic, extra-virgin olive oil and dried oregano.
  • Drizzle the dressing over the salad.
  • Once cooked, plate up the Birds Eye Whiting on top of the salad and serve.
