Method
- Heat the olive oil in a griddle and add the pork chop. Cook for 5-7 minutes on each side, until cooked through.
- In the meantime, assemble the salad by combining the fennel, orange, rocket and sunflower seeds.
- Make the dressing by mixing the mustard, olive oil and salt and pepper in a small bowl.
- Drizzle the dressing over the salad.
- Once cooked, serve the pork chop alongside the salad.
