Grilled Pork with Orange & Fennel Salad

Ingredients
  

  • 1/2 tablespoon extra-virgin olive oil
  • 150 g pork loin chops or pork steaks
Ingredients for Salad
  • 1/2 cup fennel bulb julienned
  • 1/2 orange sliced
  • 1 cup rocket leaves
  • 1 tablespoon sunflower seeds
Ingredients for Dressing
  • 1/2 teaspoon seeded mustard
  • 1/2 tablespoon extra-virgin olive oil
  • salt & pepper to taste

Method
 

  1. Heat the olive oil in a griddle and add the pork chop. Cook for 5-7 minutes on each side, until cooked through.
  2. In the meantime, assemble the salad by combining the fennel, orange, rocket and sunflower seeds.
  3. Make the dressing by mixing the mustard, olive oil and salt and pepper in a small bowl.
  4. Drizzle the dressing over the salad.
  5. Once cooked, serve the pork chop alongside the salad.
