- 60 g halloumi cut into thick slices
- 2 slices sourdough bread
- 1/3 avocado mashed
- 1/2 cup rocket leaves
- 1/2 cup red cabbage finely shredded
- 1/4 carrot grated
- 1/2 to mato sliced
- Heat a frying pan over medium heat. Add the halloumi slices and fry on each side for 3 minutes, until golden.
- Spread the avocado on one slice of sourdough and top with rocket, cabbage, carrot, tomato and halloumi.
- Top with the remaining sourdough slice and cut in half to serve.
