Crispy Chicken Burger

Ingredients
  

  • 400 g chicken breast
  • 1 whole free range egg
  • 2 tsp onion powder
  • 2 tsp paprika
  • 2 tsp chilli flakes
  • 2 tsp oregano
  • 4 sourdough rolls (or gluten free)
  • 1 cup iceberg lettuce
Ingredients for Serving (Per Person)
  • 4 sourdough bread roll or gluten free roll
  • 1 cup iceberg lettuce
  • 2 tsp mayonnaise sliced
  • 4 tsp lemon juice
  • 2 tsp salt and pepper
  • 1 cup cornflakes

Method
 

  1. Preheat the oven or air fryer to 200°C and line a baking tray.
  2. Mix all the spices together in a bowl. Coat the chicken in half the spice mix and set remainder aside.
  3. Whisk the egg in a shallow dish and place the crushed cornflakes in another. Add the remaining spice mix to the cornflakes, mix well.
  4. Dip the seasoned chicken into the egg then toss in the cornflakes. Place onto a lined baking tray or air fryer basket. Optional to lightly spray with olive oil.
  5. Bake for 20 minutes or air fry for 15 minutes, flipping halfway.
  6. Meanwhile, mix the sauce ingredients (mayonaise, lemon juice and sriracha) together in a bowl and spread over the burger buns (optional to warm/toast). Assemble the burgers with the lettuce, crumbed chicken and enjoy!
