Ingredients
- 2 eggs free range
- 1/4 teaspoon baking powder gluten free baking powder
- 1/2 teaspoon cinnamon
- 1 tablespoon coconut flour
- 1/2 banana mashed
- 1 tsp coconut oil extra virgin
- 1/2 cup mixed berries fresh or frozen
- 1/4 cup yoghurt greek
- 1 tbsp pumpkin seeds
- 1/2 lime zest
Instructions
- Using a fork, mix eggs, baking powder, cinnamon and coconut flour until well combined.
- Add mashed banana and mix again until just combined. If mixture is too thick, simply add a touch of water.
- Heat oil in a small frying pan over medium heat.
- Once melted, add 1/4 of the mixture to cover the base.
- Cook until small bubbles appear and the bottom of the pancake is cooked, then gently flip over and cook the other side.
- Repeat with the rest of the mixture.
- Serve the pancakes with a dollop of natural yoghurt, berries, pepitas and lime zest.
Notes
Gluten-Free Option: To make this recipe gluten-free, replace the baking powder with gluten-free baking powder
