Chicken Nourish Bowl

  • 1 cup sweet potato cut into cubes
  • 1 cup broccoli cut into florets
  • 1 teaspoon extra-virgin olive oil
  • 150 g chicken breast sliced
  • 1/2 cup red cabbage thinly sliced
  • 1 cup baby spinach

Ingredients for Dressing

  • 1/2 tablespoon apple cider vinegar
  • 1/2 tablespoon extra-virgin olive oil
  • 1/2 teaspoon dijon mustard
  • salt & pepper to taste


  • Preheat the oven to 200°C, on a fan forced setting.
  • Place the sweet potato and broccoli on a tray, season with salt and pepper and bake in the oven for 20 minutes.
  • Meanwhile, heat the olive oil in a frying pan over a medium heat. Add in chicken slices and cook for 3 to 4 minutes on each side, until golden. Season with salt and pepper.
  • In a small bowl or jar, combine the dressing ingredients.
  • Arrange the red cabbage, baby spinach, sweet potato, broccoli and chicken in a bowl.
  • Pour over the dressing to serve.
