Preheat the oven to 200°C, on a fan forced setting.
Place the sweet potato and broccoli on a tray, season with salt and pepper and bake in the oven for 20 minutes.
Meanwhile, heat the olive oil in a frying pan over a medium heat. Add in chicken slices and cook for 3 to 4 minutes on each side, until golden. Season with salt and pepper.
In a small bowl or jar, combine the dressing ingredients.
Arrange the red cabbage, baby spinach, sweet potato, broccoli and chicken in a bowl.
Pour over the dressing to serve.
