Cauliflower Detox Salad
Did you over indulge over the holiday period? Give my Cauliflower Detox Bowl a go and you'll be feel fresher with every mouthful!
Ingredients
For the Cauliflower & Chickpeas:
- 2 cups cauliflower finely chopped
- 1 tablespoons extra-virgin olive oil
- 1 teaspoons ground cumin
- salt and pepper to taste
- 2 cups tinned chickpeas drained and rinsed
For the Salad:
- 2/3 green apple thick slices
- 2/3 avocado sliced
- 1/2 cup fresh mint roughly chopped
- 1/2 cup fresh parsley roughly chopped
For the Dressing:
- 2 teaspoons wholegrain mustard
- 1/2 lemons juiced
- 2 teaspoons extra-virgin olive oil
- salt and pepper to taste
Instructions
For the Cauliflower & Chickpeas:
- Preheat oven to 200ºC.
- In a large bowl combine cauliflower, olive oil, cumin, salt and pepper.
- Spread them out on an oven tray in an even layer.
- Bake for 15 minutes,then add the chickpeas and cook for a further 10-15 minutes.
For the Salad:
- Divide the apple, avocado and fresh herbs between two bowls.
- When the cauliflower and chickpeas are cooked, add half to each salad bowl.
For the Dressing:
- Combine all ingredients in a small bowl and set aside.
To Serve:
- Pour half of the dressing over each bowl of cauliflower salad.
